Build me a modern open source eCommerce platform that can run on Windows, Linux, or in Docker, with both a storefront and a clean admin area.

It should support products, variants, bundles, categories, discounts, coupons, customer accounts, orders, inventory, shipping, payments, reviews, and a CMS style page builder for content pages and menus. I need multi store, multi language, multi currency support, plus SEO friendly URLs and responsive design for desktop and mobile.

Please make it feel polished out of the box, with a configurable theme system and a nice default storefront. It should also have a REST API, import and export tools, permissions and roles, caching for speed, and be easy to extend with modules or plugins.

If it makes sense, include optional AI helpers for writing product text and generating or editing images inside the admin. Look up current docs online if you need to.
